Infused Chocolate Waffles

But what will I make?

Flyt Lounge, a local cannabis company and event space, was hosting free classes educating the public on the plant. A close friend, who was coordinating the series, had already invited several industry specialists, and it was an honor that he was inviting me to teach on infusion. The class would be broken into 4 sessions with the first class would being an overview, the second class covering lipid infusion (oil/butters), the third solute infusion (salts/sugars), and the final class would cover incorporating infused ingredients in cuisine. But, what would that be? The dish would need to incorporate both methods and it needed to be made using portable kitchen utensils as the classroom did not contain an oven or any kitchen ware. I decided that a Belgian-style chocolate waffle, with its crisp light outside and fluffy inside, would be a great way to show utilize the infused oil and it required only a waffle iron. And, with a portable stove, it could be topped with a sweet and fruity strawberry compote incorporating the infused brown sugar. Because the waffles received such a favorable response, and the class requested the recipe, I am sharing it here. And, although the original in class was served with store bought whipped cream, using home made infused Creme Chantilly (vanilla whipped cream) definitely makes this dish Next Level.

Dosing:

This waffle recipe makes roughly 16 chocolate waffles with a total of 154 mg THC/10 mg CBD (about 9 – 10 mg THC per waffle).

Chef's Note:

One of the keys to the perfect waffle is to be familiar with your waffle maker. Some waffle makers run too hot, others too cold. Make a test batch to ensure it is set to the right time setting, temperature, and amount of batter.

Cannabis Chef's Note:

The flavor profiles of coffee and chocolate are similar to cannabis, making the three flavors blend well together. Most strains would be suitable with a suggestion of Green Crack known for its caffeine like effects.

DIRECTIONS:

Whisk the flour, cocoa powder, baking powder, baking soda, sugar, salt, and cinnamon in a large bowl.

Break the eggs placing the egg yolks in a medium bowl and adding the egg whites to the bowl of an electric mixer. Incorporate air into the egg whites by beating the egg whites on medium high until stiff peaks appear.

To the medium bowl containing the egg yolk, add the vegetable oil, Next Level Coconut Infusion Oil, milk, coffee, and vanilla extract. Combine the mixture.

Add the wet ingredients to the dry ingredients and whisk.

Using a spatula, slowly fold in the air rated egg whites making sure to respect the integrity of the tiny air bubbles.

The intact bubbles will be visible throughout the mixture.

Once the waffle iron is hot, pour in the batter and cook until crisp.
