Chef's Note:

In order to get the best medium peaks, make the bowl and whipped cream as cold as possible. You can place the bowl in the freezer and event put the whipped cream in the freezer with it. But make sure to remove the whipped cream before it freezes.

Make sure to watch the complete process. Perfectly whipped cream takes 3-4 minutes and can quickly become over whipped resulting in a curdled grainy texture instead of the soft velvety texture which is ideal.

Medium-high is the ideal speed for this process. Using “high” will result in over whipped cream.

This recipe can be made up to 24 hours ahead of time. After preparing the recipe, place the mixture in a tightly sealed bowl in the refrigerator.
